Sauteed tomatoes and zucchini
Ingredients:
            1/4 cup Sunnybay Mediterranean Marinade
            2 tomatoes
            1 zucchini
Preparation
Slice the tomatoes and zucchini and saute them in 1/8 cup of marinade.
While frying the sauteed vegetables, add an additional 1/8 cup of
marinade to increase flavor. This process may be repeated with other
vegetables for other sensational flavors.




Chicken Stir-fry
Ingredients:
            4 Tbsp. Sunnybay Mediterranean Marinade
            2-4 boneless skinless chicken breasts
            Whatever vegetable(s) you like
            3-4 tablespoons olive oil
            1 Tbsp. butter
            Salt to taste
            Pepper to taste
            1/2 - 1 tsp. dill weed
            1-2 tsp. soy sauce
            Juice from 1 lemon
Preparation
Cube the chicken (1" cubes, or so). Heat the olive oil and butter and add chicken. Add salt and pepper to taste and the dill weed as the chicken sautees. Add your choice of vegetables to the stir fry. When nearly done, add soy sauce, lemon juice. Top it off with the Sunnybay Marinade 2 or 3 minutes before serving, but turn down the heat, so the marinade does not burn. Serve hot.




Mediterranean Butterflied Leg of Lamb with Roasted Vegetables
Ingredients:
            1 Butterflied Leg of Morgan Valley Lamb
            1 Jar - Sunnybay Mediterranean Marinade
            4 Red Onions
            1 Red Bell Pepper
            1 Yellow Bell Pepper
            Portabella Mushrooms
Preparation
Soak Morgan Valley Butterflied Leg of Lamb in Sunnybay Mediterranean Marinade overnight. Preheat oven to 450 degrees. Remove lamb from marinade; reserve marinade. Insert meat thermometer into center of thickest part of meat. Place lamb on rack in shallow roasting pan. Roast at 450 degrees for 10 minutes, then decrease temperature to 350 degrees. Roast until thermometer reaches 155 degrees for medium, about 20-25 minutes per pound. Baste with reserved marinade every 10 minutes. Let stand for 15 minutes before slicing.

As soon as the lamb is in the oven, thin slice 4 red onions, 1 red and 1 yellow bell pepper, and a few portabella mushrooms. Arrange in oven proof foil pouch. Pour ¼ cup of Sunnybay Mediterranean Marinade into the pouch, double fold end and shake to coat; place entire pouch onto cookie sheet. 30 minutes before lamb is done, place cookie sheet in oven with lamb. While lamb is finished roasting and rests for 15 minute, crank the oven up to 450 degrees for veggies to get a bit toasty.

To serve, slice leg of lamb and place on platter. Surround with roasted vegetables and top with shaved Beehive Cheese parmesan-asiago. Lovely served over lemon-herbed polenta.


Fried Halibut
Ingredients:
            1/4 cup Sunnybay Mediterranean Marinade
            flour
            bread crumbs
            Parmesan Cheese
            pint of half & half
            butter and lemon
Preparation
Put into zip lock bag and put in enough Sunnybay Mediterranean Marinade to cover fish. If possible leave in refrigerator over night or at least an hour or two before cooking. Heat butter in fry pan or skillet at medium low. Coat halibut in flour and then dip in bowl mixed with two eggs and half & half. Then sprinkle parmesan cheese on both sides of fish and dip into bread crumbs - coat thoroughly. Put fish into a frying pan, turn heat up to medium and cook until golden brown. Turn and cook other side until golden brown. Turn down heat to low and add several tablespoons of marinade. Cook for 3-5 minutes, then remove fish from pan. Squeeze a small lemon wedge into the pan with the butter, then pour over the fish and serve.




Sunnybay Mediterranean Pasta Salad
Ingredients:
            1/4 cup Sunnybay Mediterranean Marinade
            12oz pasta, cook & drained
            1 medium carrot, julienned
            1 zuchinni, julienned
            1 red bell pepper, diced
            10 cherry tomatoes, halved
            1/2 cup green onions, diced
            1/2 cup mozarella, swiss or feta, diced
Preparation
Cook pasta according to directions, add carrots the last 3 minutes of cooking time. Drain well. Add remaining ingredients and toss with Sunnybay Mediterranean marinade. Chill & enjoy.


Sunnybay Hamburgers
Ingredients:
            1 large spoonfull Sunnybay Mediterranean Marinade
            1/4 pound ground beef or ground turkey
Preparation
Mix together, form into patty and grill.
